The distillery is the realisation of the crazy dream of Gilles Victors, a former knifemaker who developed a passion for the world of whisky and spirits. The distillery offers tours and tastings of gin, pastis, organic whiskies and white and amber rums.
Over the last ten years or so, the distillery has patiently built up a fine human and family history, as well as friendships, around an initial project to develop exceptional spirits.
The distillery’s production is entirely organic, authentic and close to its terroir. It is based on a rigorous selection of raw materials, working with organic farmers and wild plants, either grown on the distillery’s own premises or in short circuits.
The production includes :
– Gins made from organic fruit and botanicals, distilled in stills dedicated to them alone and patiently reduced with spring water over several months.
– A Pastis made entirely by slow infusion of selected botanicals, and matured for a long time in vats.
– Single Malt Whiskies first brewed on site from the finest organic barley, harvested and malted in France, then distilled in copper pot stills, and finally aged in the finest casks.
– Jamaican-style white and amber rums, rich in flavour and distilled in our Calcifer double retort still, the only one of its kind in mainland France.
